Peaberry is a genetic mutation occurring in all coffee species, causing only one, large, round seed to form in a cherry. Some speculate that peaberry is a ‘super bean’ due to one seed retaining all of the nutrients normally shared between two. The science behind this is not thoroughly researched, but lab tests do confirm a higher concentration of naturally occurring sugars and some oils in peaberry than regular beans of the same plant. That sweetness and bright acidity carries through the roasting process, yielding a light bodied, clean cup with delicate tea-like characteristics. Surprisingly 5-10% of coffee crops result in peaberry, though not all growers separate it due to the intensive sorting and processing required. It is most commonly washed process, and requires different roasting methods due to it’s characteristically round, dense body. The most common origins seen in the US include Tanzania, Kenya, Rwanda, Hawaii, and Brazil.
