Description
This coffee is produced in the mountains of Sierra Nevada de Santa Maria, the department of Magdalena on the very northern coast of Colombia. Over 70% of coffee farmers in the region belong to the indigenous Arhuaco community, using ancestral methods of harvesting and processing. Consisting of Colombia and Castillo varietals, it is grown using intercropping to maintain soil fertility and richness; as a result, 93% is shade grown amongst banana, guineo, and malanga trees.
This lot is harvested between October and February at approximately 1,800 meters. The bean are then fully washed, laid out on raised beds to dry partially in the sun, and finished with a solar-powered machine.
