Description
This rare, incredibly aromatic coffee is grown in the Hambela Bedessa District of the Guji Zone, Oromia Region by producer Asnake Kassa. The fresh cherries are hand-sorted for ripeness and quality, then rinsed clean of dirt. The good cherry is packed into plastic bags to undergo an extended 3-day dry fermentation, which relies on the gas created from the natural fermentation to limit and remove the oxygen in the container. This process differs from anaerobic or co-fermentation in that no water or fruit is added, so the intense flavors are entirely natural. The whole cherries are then spread onto raised beds dry under the sun for 12 days, and dry milled to remove the husks.
This Ethiopian Heirloom lot is grown and harvested at the high elevation of 2120 masl, between the months of November & December.
