Description

This coffee is produced by the Cautivo co-op in northern Peru. The members of the co-op strive to improve the standard of living for all involved. They promote water management, environmental protection, and the production of organic materials, such as fertilizers. It is through these sustainable practices that the Cautivo co-op has been able to achieve their organic certification.

During the mountain water-processing method, the green coffee beans are submerged in filtered, heated water; this extracts all of the soluble material from the beans. The water solution is then filtered to separate the caffeine compounds from the aromatics that also came out during the extraction. Then, the coffee beans are placed in an immersion tank with the caffeine-free solution, allowing them to reabsorb everything, except for the caffeine.
