Peaberry is a genetic mutation occurring in all coffee species, which causes only one, large, round seed to form in a cherry. There is speculation that peaberry is a ‘super bean’ due to one seed retaining all of the nutrients normally shared between two. The science behind this is not thoroughly researched, but lab tests do confirm a higher concentration of naturally occurring sugars and some oils in peaberry than in regular beans of the same plant. That sweetness and bright acidity carries over after the roasting process, often yielding a light body, clean cup, and delicate floral and almost tea-like characteristics. Surprisingly 5-10% of each crop results in a peaberry, though not all growers separate it from the rest of the fruit due to the intensive sorting and processing required. It is most commonly washed process as part of sorting, and requires different roasting methods due to it’s characteristically round, dense body. The most common origins seen in the US include Tanzania, Kenya, Rwanda, Hawaii, and Brazil.
