Third generation coffee farmer Gerardo Peñalva brings organic practices as well as years of expertise to his coffee production in Marcala. His mission, he says, is to “produce specialty coffee, maintain agricultural practices friendly to the environment and focus on the issue of corporate social responsibility. To obtain quality coffee, we must be full of patience and above all enjoy the activity that involves the work of obtaining quality and maintain the vision that the farm is a family heritage that we must take care of well our children and grandchildren.” These direct trade beans are harvested at 1650 meters and made up entirely of the Bourbon varietal. After the fresh beans are naturally-processed, they are laid out to sun-dry on raised beds.
