We always have a unique Ethiopia light roast on our shelf, and will periodically rotate these every few months to year based on crop availability. Widely acknowledged as the birthplace of coffee, offerings from Ethiopia are considered to be some of the best in the world. The varying growing regions’ altitude and landscape have yielded genetic diversity in a huge range of uncategorized plants known just as heirloom, all with vastly unique flavor among their coffees. This lack of specificity around variety means that specialty buyers differentiate coffees from Ethiopia by altitude, cupping score, and the major growing regions of Sidama, Yirgacheffe, Limu, Oromia (formerly Harrar), and Jimma. The majority of coffee is grown via garden or semi-forested system intercropped with other plants, and farmers in Ethiopia also employee a variety of modern processing and fermentation methods.
